You asked and I will try to answer. After making this meal and other variations of it for my family, I have been asked to put the recipe on paper. A lot of this can be modified to what you have in your fridge. I have done this basic concept with different veggies and proteins. Be adventurous with this and use the below as a simple template.
Shrimp (serving for 2 adults with leftovers)
- 1 lb Frozen Shrimp
- 2 tbsp Ghee
- 2-3 cloves of minced garlic (the more the better, if you are like MG)
- 2-3 tbsp TJ’s Everything But the Bagel Seasoning
Thaw the Frozen Shrimp in a bowl of cold water until soft. Add to medium heat skillet with 1/2 tbsp of Ghee. Frozen shrimp will produce a lot of water, drain as needed until the majority of the water is gone. Add garlic and ghee, and reduce heat to low. Cover with a coat of Everything But Bagel Seasoning, cover pan and cook for about 5 mins, toss and cover the other side with seasoning. You are looking for a slightly pink shrimp.
Mashed Potatoes (serving for 4 adults with leftovers)
- 4 large potatoes, cubed
- 1/2 can coconut cream (with coconut cream on a shortage, a typical can of coconut milk has enough cream on the top)
- 1/4-1/2 box of Chicken Stock (check the label but the Costco Chicken Stock we got is compliant)
- 2-3 tbsp of Ghee (add to taste, but don’t overdo it)
Boil potatoes until tender and strain. In a warm pot add coconut cream and use an immersion blender to mash, adding Chicken Broth slowly (this helps with starchiness of the potatoes and makes them creamier) until desired consistency. Finally, add ghee, stir in and serve.
Grilled Asparagus (serving for 4 adults with leftovers)
- 1 bag of Asparagus (Costco, of course!)
- 1-2 tbsp Extra Virgin Olive Oil
- 3 cloves of minced garlic (optional, but not if you ask MG)
Toss all together in a bowl until well coated, cook to designed tenderness.
