Day 23 – Stay on Target!

I think I had said before that this month was going to be crazy. The crazy began today. From the moment I walked into work looking like a drowned rat and then my computer having issues, I knew it was going to be a stressful, long day. It wasn’t until 3:30 that I got to eat lunch. By then, I was starving! After such a chaotic day of work, I went to my happy place – and if you know me, you are saying TARGET!!

Day 23:

What went well?

MG– Treating myself (when stressed) to something that wasn’t food related. Also, even with the craziness of the day, eating three very filling and different meals. I also haven’t commented on how much energy I’ve had throughout the day, I don’t get that mid-afternoon slump. I fall asleep super fast (not that I’ve ever had a problem before), and I can tell that my stomach is getting flatter.

G– Had a nice breakfast and was able to eat my lunch at a decent hour. Survived another day at work again with a skeleton crew.

What could have gone better?

MG– Honestly, I was going to eat an emergency snack of almonds earlier in the day but I completely forgot them when walking to the bank but that probably turned out to be fine since I was able to eat an actual meal. I need to make sure that my water bottle is filled before I begin my day at work.

G– It seems like no matter how early I get up, I always feel rushed getting to work but I know breakfast is an important meal and understand that prepping isn’t ideal.

What will you do tomorrow?

MG-I’m going to fill my water bottle first thing when I get to work in the morning. I’m also going to go ahead and prepare to be super busy and try to plan ahead for a time when I can carve out 15-20 minutes for lunch.

G– Try to wake up earlier and see if that helps with prepping for breakfast. I also plan to enjoy some more of my gumbo for lunch!

Thingamajig of the day

We have had a few recipes where I thought it might be handy to have a food processor. So, a few weeks back, I went to Walmart and got us an affordable one just to see what we thought of them. I found this Farberware food processor and we’ve loved it so far.

Arugula, sweet potato and zucchini hash, smoked salmon, with an aioli sauce.

For tonight’s dinner, the food processor came in super handy when shredding the zucchini and sweet potatoes. Maybe we’ll share this recipe soon! Let us know if you’d like it!
